Spiced Date Snack — Simple Ayurvedic Energy Bite
A no-cook Ayurvedic snack of Medjool dates rolled in warming spices and desiccated coconut. Naturally sweet and nourishing, these bites are a simple year-round option traditionally considered grounding for Vata and satisfying for Pitta.

Dates hold a long history in Ayurvedic cooking — considered sweet, heavy, and nourishing in quality, they are a particularly grounding food for Vata constitutions and a satisfying, natural sweet for Pitta. This no-cook snack requires only a few minutes of preparation: dates are pitted and rolled with warming spices and a small amount of ghee, then coated in desiccated coconut. They are a simple and practical snack throughout the year, appropriate for all seasons.
Ingredients
- 12 large Medjool dates (approx. 240 g), pitted
- 1 tsp ghee, melted and cooled slightly
- ½ tsp ground cardamom
- ¼ tsp ground cinnamon
- Small pinch of ground ginger
- Small pinch of ground black pepper
- 4 tbsp desiccated coconut (unsweetened)
- 12 whole blanched almonds or walnut halves (one per date)
Method
- Slice each date open lengthways and press a single almond or walnut half into the centre, then close the date gently around the nut.
- Combine the ground cardamom, cinnamon, ginger, and black pepper in a small bowl.
- Drizzle the melted ghee over the stuffed dates and turn them gently to coat all surfaces lightly.
- Roll each date in the spice mixture until evenly dusted.
- Spread the desiccated coconut on a small plate and roll each date in the coconut until well coated.
- Arrange on a serving plate and refrigerate for 10 minutes to firm up before serving.
Notes
- These dates will keep refrigerated in an airtight container for up to five days.
- For a Kapha-balancing version, reduce the ghee to ½ tsp, increase the ground ginger to ½ tsp, and skip the coconut coating.
- Raw cacao powder or finely chopped pistachios can replace the desiccated coconut for variation.
